Brix Bakes: Cookies & Cream Oreo Blondies


Hope everyone enjoyed the Big Game on Sunday!

I celebrated the occasion with family and friends, though my interest level in the game was pretty low. Truthfully, one of my only interests last night was ensuring my cookies and cream blondies went over well with the crowd…And since all of the bars disappeared before night’s end, I’d say they were a success! =)

Check out the yummy recipe for cookies and cream blondies below.



  • 1 cup all purpose flour

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup butter, melted
or room temperature

  • 1 cup sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 cup coarsely chopped Oreo-type cookies

Variations: I added 1 tsp of cinnamon to the dry mixture and ¼ cup of unsweetened vanilla almond milk to the wet mixture.


  1. Preheat oven to 350F.

  2. Line an 8×8-inch baking pan with aluminum foil and lightly grease.

  3. In a medium mixing bowl, mix flour, baking soda and salt.

  4. In a large mixing bowl, mix butter and sugar. Beat in egg, then vanilla extract.

  5. Add dy mixture to wet mixture and stir until dry ingredients are completely blended. Fold in Oreo cookies.

  6. Bake for 25 to 30 minutes, until toothpick inserted in center comes out clean or with few crumbs attached.

  7. Allow bars to cool 10 minutes before slicing.

  8. Enjoy!


Makes 12 to 20 bars (dependent on size).
